Greek Pasteli

Description

Greek pasteli is a sweet, honey-and-sesame seed bar. Natalie’s version uses a mix of seeds for a satisfying snack that travels well on hikes and trails.

Ingredients

  • 3.5 cups (about 800 ml) seeds, such as flax, pumpkin, sesame, sunflower, or hemp seeds
  • 1 cup (about 250 ml) good honey
  • Zest of 1 lemon
  • Dash of salt

Instructions

  1. Heat the honey over medium heat.
  2. In a bowl, combine the seeds and salt.
  3. Add the seed mixture to the honey and mix well.
  4. Remove from the heat and stir in the lemon zest.
  5. Press the mixture evenly into a parchment-lined 18 × 13-inch (30 × 44 cm) pan. Grease the parchment first to prevent sticking.
  6. Bake at 300°F (150°C) for 30–40 minutes, rotating the pan once. Bake for about 40 minutes for a toastier result.
  7. Cut into rectangles once partially cooled.

A Note from Natalie

Snack break. 🌲🥾☀️ Since I was young, I’ve loved Greek “pasteli” - a sweet bar made with honey and sesame seeds. So naturally I’ve had my eye on all the sweet and savory seed bars in stores today. I started making my own version for fun, picking and choosing from what I want and don’t want in mine. Decided to give it a share. 😊 Makes for a yummy & pretty healthful little munchie - at home or on the trails.
