Description

Cranachan is a traditional Scottish dessert of fresh raspberries, cream, oats, and whisky. This Sassenach version makes a celebratory dessert for Mother's Day or any occasion, especially when paired with a dram of whisky.

Ingredients

  • 1/2 cup steel-cut oats
  • 2 cups fresh raspberries
  • 3 tablespoons The Sassenach Blended Scotch Whisky
  • 3 tablespoons honey, divided
  • 2 teaspoons sugar
  • 2 cups heavy whipping cream
  • 3 tablespoons mascarpone cheese

Instructions

  1. Toast the oats in a skillet or on a sheet pan until lightly browned. Watch them closely, as this will not take long.
  2. Crush the raspberries in a bowl with a fork. Mix in the sugar and 1 tablespoon of the honey.
  3. Using a food processor or mixer, whip the cream until it begins to thicken. Add the mascarpone, remaining 2 tablespoons honey, and Scotch whisky, then continue whipping until peaks form.
  4. To assemble, add one or two spoonfuls of the raspberry mixture to the bottom of a glass. Add a layer of oats and a layer of cream, then repeat until the glass is full.
  5. Top with fresh raspberries and serve with a dram of whisky.
