Coffee Ice Cream Sandwiches

Description

These no-churn Coffee Ice Cream Sandwiches are a sweet, creamy summer treat with rich Peet's coffee flavor. Use regular coffee for a buzz-worthy dessert, or choose decaf so everyone can join the celebration. No ice cream maker required.

Ingredients

For the Coffee Ice Cream

  • 1 cup sweetened condensed milk
  • 1 cup brewed Peet's coffee or decaf, cooled to room temperature
  • 2 teaspoons vanilla extract
  • Pinch of salt
  • 2 cups heavy whipping cream

For the Sandwiches

  • 12–16 homemade or store-bought chocolate or chocolate-chip cookies
  • Mini chocolate chips, sprinkles, or crushed nuts, optional for rolling

Instructions

  1. In a mixing bowl, combine the sweetened condensed milk, cooled coffee, vanilla extract, and salt.
  2. In a separate chilled bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the coffee mixture until fully combined.
  3. Pour the mixture into a loaf pan or airtight container. Smooth the top and freeze for at least 6 hours or overnight.
  4. Scoop about 1/4 cup of frozen coffee ice cream onto the flat side of one cookie. Top with another cookie and gently press to form a sandwich. Roll the edges in chocolate chips, sprinkles, or crushed nuts, if desired.
  5. Return the sandwiches to the freezer to firm up before serving. Enjoy immediately, or store in the freezer for up to one week.
