Apple Juice Spice Cake

Description

Natalie created this Bundt cake as a way to use the apple juice from her family’s backyard apple trees. It is subtly sweet, with apple and warm spices that pair especially well with coffee or ice cream.

Ingredients

  • 1 cup brown sugar, or a little more to taste
  • 1 1/2 cups softened butter
  • 5 eggs
  • 1 tsp vanilla extract
  • 3 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp each allspice, ground cloves, and cardamom
  • 1 1/4 cups apple juice
  • Powdered sugar, for topping

Instructions

  1. Mix the dry ingredients together in a bowl.
  2. In a separate bowl, whisk together the butter, brown sugar, and eggs.
  3. Combine the wet and dry ingredients, then mix in the apple juice.
  4. Pour the batter into a buttered and floured Bundt pan.
  5. Bake at 350°F (175°C) for 50–60 minutes.
  6. Allow the cake to cool, then dust liberally with powdered sugar.

A Note from Natalie

This fall we ended up with about a dozen 3-liter containers of 🍎 homemade 🍏 (apple juice) from our backyard apple trees, trees which I’ll gratefully add have been in the family here for three generations. I’ve been trying to come up with more ways to use up the juice, and this Bundt creation might be a new favorite. It’s not super sweet, but the apple and warm spices really came through. Nice with a cup of coffee...or some ice cream for the kiddos. 😊
